Momos ( Tibetean steamed meat dumplings)

These delicious tibetean momos are something that i do often at home. So i think it is high time that they make an appearance on my blog!;) Just see to it that the rinsed meat has been well drained, for otherwise the juices will seep out while the momos are being steamed. But the best momos according to me were the ones sold in my hometown! There was this man in my hometown who used to make his rounds every sunday on a bicycle carrying a huge basket filled with chaios ( vietnamese spring rolls) ,homemade fish sauce( nuoc mam), momos, chicken noodles soup, meat noodles & some fresh lettuce & mint which he would give with each plate of chios that we bought, like how you buy coriander in India from the market & the lady would also give you some free curry leaves to go with!! We would buy the chios, soup , momos & sometimes the noodles too! His momos were excellent , especially the outer wrapper which used to be sort of soft & shiny! But now the chio man no longer makes his rounds, another symbol from my childhood relegated to the dusty memories bin!! At that time we never knew that fish sauce was made from salted anchovies! We used to ask him about it & he used to seriously tell us kids that he made it with horse's blood & i believed it, till i left the Indian shores!:)) Nowadays thanks to globalisation, chio( nem ) wrappers & fish sauce are easily available in my hometown!


Ingredients:

All purpose flour - 1 cup, salt to taste, baking soda - a pinch, minced lamb - 100 gms, onion - 1, finely chopped, green chilli - 1, deseeded & finely chopped, egg - 1, ginger-garlic paste - 1 tsp( adjust according to taste, for i like mine to be gingery-garlicky flavourwise), coriander leaves , chopped - a handful, oil - 2 tsp, mint leaves - 4 sprigs - chopped(only the leaves)

Method:

Take the flour, salt to taste, baking soda & knead to a smooth dough. Now add the oil ( 2 tsp) & knead till you get a smooth & pliable dough. Cover & leave aside to rest for an hour. While the dough is resting start preparing the filling. Wash the minced meat & drain it well . Now place the meat, onions, green chillies, mint & coriander leaves, egg ( yes!, break the raw egg into the filling, ),salt to taste & mix ( using your fingers) till everything is well combined. Divide the dough into eleven tennis sized balls. Dust the rolling board with a little flour & roll out each ball of dough into small discs, using as little as flour as possible to roll out the dough( the dough will be sort of elastic ,so use both the rolling pin & your hands to pat out the dough).

Spoon a little filling in the centre of each disc & shape it into crescents, or form a pouch or a crescent & pinch both the edges behind as seen in the photos. Just pinch the edges together to seal the dumplings well.

To steam the dumplings:

Oil the idli steamer racks & place a dumpling in each depression & brush it lightly with oil & steam them like you would steam idlis for 10 mins. When done , remove & serve hot with chilli sauce or as a side dish with rice! Yes! that is another way to eat the momos!!;)

After 10mins the meat will be perfectly cooked & even the outer dough covering will taste yummy . Do try out this recipe & you wont be disappointed! If you love steamed indo-chinese dumplings, you will surely love these!:)
Eat these immediately for once they are cold they become a bit hard but eaten as soon as they come out of the cooker, they are soft & juicy.

kay if you love the momos sold in restos, you will like these:) I do it often & have just these for lunch ( but i someimes end up eating 10 or 12 - Okay i will go hide under the bed after telling u this:)))ha!ha!ha!
If you want more authentic taste, line the idli steamer with lettuce leaves & place momos on it & steam, serve imediately with some homemade dipping fish suce:)

Multi layered ham sandwich rolls!


Multi layered ham sandwich rolls!
This is one of the easiest sandwich recipe. In just 5 mins, you can sit down for a lunch of hot bakery/deli style ham sandwich rolls, healthy & filling at the same time!:) The seeds add a delightful crunch to the rolls .

Ingredients:

Multi layered sandwich rolls - 4, ham slices - 2, , pickled gherkins - 8 , sliced , grated cheddar cheese - 1/4 cup, butter - a few pats.


Method:
Cut each sandwich roll into 3 layers( but don't cut them all the way through, all the 3 layers should be still attached together). Butter the bread slices, place half a slice of ham on each layer, sprinkle some cheddar cheese, top with the sliced gherkins & garnish with some more cheddar cheese on top. Place the prepared sandwiches on a parchement paper lined baking tray & grill for 5 mins. Serve immediately.


Serve these crunchy & cheesy sandwich rolls with a can of chilled coke!:)

Welcome back Patti! I missed you a lot. Awaiting your kheema paratha recipe too! Lucky you. I just love those old cookbooks treasures although I own none. I had a 15-year old Sumeet mixie recipe with all those colorful pages, but my mom tossed it away when I was in US 3 years back. :(

happy to see you here asha! well my mom had just shoved it off in the cupboard & never ever used it! now since i am the only one in the family having a foodblog, she happily gave them to me ( or got rid off them?)alongwith her collection of handwritten recipes! mom happy for having got rid of these books which were just collecting dust & me very happy to add these to my ever expanding collection!:))especially the pressure cooker book,for nowadays when you buy the prestige pressure cookers, you dont get any recipe book alongwith it!

well to be honest my mom was only too glad to get rid of them ! I have also got her other cookbooks too,which i will be posting later on in my blog!:) i too have the sumeet mixie cookbook, but the preethi mixie that i bought recently did not come with any free cookbook!!

I had wanted to bake some heart shaped chocolate cakes for my dad's birthday!But by the time i finished cooking the special dinner, it was already past our dinner time & hence the baking plans were shelved for the week-end.

So this week-end , i baked this swiss roll & filled it up with some raspberry jam & covered it with some raspberry flavoured whipped cream frosting( the tiny specks on the frosting are the raspberry seeds!)

This is the first time that i am baking a swiss roll & it was a huge success! Couldn't even wait for the frosting to set properly & already half the roll was gone!;)) Normally i leave the frosted cake overnight in the fridge to firm up,but we were in a hurry to taste it( that is why in the photos , the cream appears a bit smudged on the slices;) So after just half an hour in the fridge, it was taken out to have it with our evening cup of tea!:)

Hi Paati,

The swiss rolls are a beautiful treat to the eyes.Looks great.Did your appa get to eat that or just had to satisy himself with a virtual treat.Would love to have the recipe for the rolls.I have just bought some mangoes to try out your cake.Will return with the feedback.

the only thing is i used confectioners sugar instead of normal sugar! but just chill everything before otherwise the cream will just melt off!happy baking!&thanks for visiting my blog!
