Pineapple & chicken curry

Pineapple & chicken curry
A recipe that i had cooked to celebrate my dad's birthday;) This recipe too was in my drafts from 4/27/07. I remember seeing this recipe in a weight watcher's cookbook. But since this was the only recipe which interested me , i didn't want to buy the book. So just memorised the whole recipe & as soon as i got home, wrote it down in my notebook, before i could forget it!ha!ha!
Ingredients:

Chicken fillets - 2,cubed, onion - 1, sliced, garlic - 1 clove,sliced, ginger pwd - 1/2 tsp, curry pwd - 1 1/2 tsp, cream - 1/4 cup( or more to taste!), peppercorns - 1 tbsp, coarsely crushed,salt to taste, oil - 2 tbsp, butter - 1/2 tsp (optional), turmeric pwd - 1/4 tsp, fresh pineapple( cubed) - 1/2 cup, carrot - 1,cut into thick slices & parboiled, sugar - A pinch.
For the marinade:
Curry pwd - 1 tsp(heaped), peppercorns - 1 1/2 tsp, coarsely crushed, turmeric pwd - 1/4 tsp, salt to taste.
Method:
Marinate the chicken cubes with the above ingredients for around 10 mins. Sauté the chicken in a tsp of oil till lightly browned ,drain & reserve.
Heat the oil in a pan & sauté the onion & garlic till onions are translucent. Add the curry,turmeric & ginger pwd & stir fry for a few seconds. Now add the pineapple,carrot & chicken cubes & sauté for a minute or two. Pour in some water( just enough to cover the chicken) adjust the seasoning& simmer on medium heat, till the chicken is cooked & the sauce has also thickened considerably. Remove from heat , stir in the fresh cream & serve hot with rice or pasta.
