Potato roast ( urulai kizhangu roast)
Potato roast ( Urulai kizhangu roast)
This is something i serve with curd rice when i am in no mood to cook. The first time i made this 'C' loved it as a combo with curd rice & from then it started to appear regularly on our dining table! 'C' loved it so much, that he asked for the recipe & cooked it one day when i was sick! Whereas i took the photos of the finished dish to put it up on my blog & thereby immortalise 'C' s cooking experience in the kitchen!;))
Ingredients:
Potatoes - 5, peeled & cubed, onion - 1, chopped, garlic - 2 cloves, sliced, oil - 3 tbsps, curry leaves - a sprig, mustard seeds - 1 tsp, urad dal - 1 tsp, turmeric pwd - 1/4 tsp, sambar pwd - 2 tsp( i had run out of sambar pwd & hence asked 'C' to use the mtr rasam pwd instead), chilli pwd - 1/4 tsp.
Method:
Heat oil in a pan & season with mustard seeds, urad dal & curry leaves. Then add the onions & garlic & stir fry quickly for a minute. Add the potatoes, turmeric pwd, sambar pwd, chilli pwd , salt & fry till the potatoes are well coated with the spice mixture. Now add a little water & cook till the potato cubes are tender & the mixture has become dry. Garnish with coriander leaves & serve with curd rice .
Curd rice with this potato roast is one of my favourite food!:)
