Kari melagu ( mutton pepper fry)
Grind together 1 inch piece ginger & 3 cloves garlic to a paste. Dry roast 2 tsp peppercorns & powder &; keep aside. Heat 2 tbsp oil in a kadai & fry one piece of cinnamon, 2 cloves & a sprig of curry leaves. Then add 1 onion sliced & fry. Add the ground paste, 1 chopped tomato, 1/2 tsp turmeric pwd, 1 tsp chilli pwd 1 1 /2 tsp coriander pwd & fry for 2 to 3 mins. Now add the mutton ( 250 gms ) & the pepper pwd & stir fry for 3 mins. Add required amount of water & cook till the mutton is done. Now add 2 to 3 tbsp milk to glaze . In a small pan heat 2 tbsp ghee & season with 10 to 12 curry leaves & pour over the cooked mutton gravy & serve hot with rice & sambhar. ENJOY!!!
This is chef Damodaran's recipe . When i first read through this recipe , i was a bit puzzled to read his instruction to add milk towards the end to glaze the meat? I followed his instruction half heartedly because tamilians normally dont add milk to non veg dishes. But got to admit it , that the end product was mouthwateringly pepperlicious( ha ha ha i have coined a new word!)
Even C who doesn't like mutton loved it! So thats another dish that is going to become a regular on my menu. And yes the milk did add a shine to the mutton dish! but the next time i am going to serve this with chappatis for a weekday dinner.
