Kerala egg roast
I was going through the Amazon site ( which btw is my one of my favourite pass time activity) looking for some good kerala non vegetarian cookbooks & came across this KERALA KITCHEN by Lathika George. I ordered the book , based on its editorial review &; i am glad that i bought this book. This was the first recipe that i had tried out from this book & it was a huge hit :) If you love Syrian Christian non vegetarian dishes, then do get this book, which is a real treasure trove of authentic keralite recipes. With this book in hand, i don't ever have to search the net for kerala food recipes , for all those so called authentic recipes are in the book, starting from how to cook kerala red rice to aappan, kalaapam to stews, vegetables, biryanis, pickles & desserts. What i really loved about this book is she tells us even the amt of water & salt to be added to each dish:)
Ingredients:
Method:
Heat the oil in a pan . Add the onions & stir fry the onions over low heat for 3 to 4 mins , until they are lightly browned. Add the ginger, garlic , tomatoes & curry leaves & continue frying for another 2 mins , until the onions are a darker brown. Mix the chilli pwd, turmeric pwd, peppercorns & salt on a small bowl , adding just enough water to make a thick paste. Add this to the onion mixture alongwith the boiled whole eggs.
