I was going through the Amazon site ( which btw is my one of my favourite pass time activity) looking for some good kerala non vegetarian cookbooks & came across this KERALA KITCHEN by Lathika George. I ordered the book , based on its editorial review &; i am glad that i bought this book.This was the first recipe that i had tried out from this book & it was a huge hit :) If you love Syrian Christian non vegetarian dishes, then do get this book, which is a real treasure trove of authentic keralite recipes. With this book in hand, i don't ever have to search the net for kerala food recipes , for all those so called authentic recipes are in the book, starting from how to cook kerala red rice to aappan, kalaapam to stews, vegetables, biryanis, pickles & desserts. What i really loved about this book is she tells us even the amt of water & salt to be added to each dish:)

Ingredients:

Onions ( big) - 3, finely sliced, oil - 1/4 cup, garlic - 4 cloves , sliced, ginger - 1 inch piece , cut into thin matchsticks, tomatoes - 2, quatered & deseeded, curry leaves - 12, chilli pwd - 1 tsp, turmeric pwd - 1/2 tsp, peppercorns - 1/2 tsp, coarsely crushed, salt - 1 tsp, hard boiled eggs - 6.

Method:



Heat the oil in a pan . Add the onions & stir fry the onions over low heat for 3 to 4 mins , until they are lightly browned. Add the ginger, garlic , tomatoes & curry leaves & continue frying for another 2 mins , until the onions are a darker brown. Mix the chilli pwd, turmeric pwd, peppercorns & salt on a small bowl , adding just enough water to make a thick paste. Add this to the onion mixture alongwith the boiled whole eggs.


Continue frying for 1 to 2 mins , until the onions & spices have blended & coated the eggs. Just befor serving, halve the eggs, spoon the gravy over the cut eggs & serve with rice or rotis.

I served these curried eggs with rotis.

My meal today - Chappatis, Kerala egg roast & baked spring rolls:)
