Kaya ( Coconut milk jam)





Kaya ( Coconut milk jam)
Coconut milk - 1 cup, eggs - 4 , sugar - 1 cup, pandan essence - 1/ 2 tsp, green food colouring - 2 drops.

Beat the eggs lightly. Blend together the coconut milk, sugar, essence & food colouring. Transfer the eggs & coconut milk mixture to breadmaker machine & press jam function. When it is done the mixture will be a bit crumbly, so put it in the blender &  blend for a few seconds till you get a smooth paste. Store in the fridge & use within 2 to 3 days.

Recipe source: Got this from one of the food forums & food blogs that i visit often but mainly based on this recipe!Thank you for the recipe!:) Made a few changes to the recipe! Since i didn't have pandan leaves on hand , i just used pandan essence & some green colouring too to get the right colour! This recipe was too good, especially when slathered on some freshly baked sweet buns! Try this one out, as for me i have already done it twice !:)

Dear Paati,

Your recipes are wonderful. I would love to try this kaya jam.But i don't have a bread maker machine.Is there any other method for the same?

Also can you please post the recipes for cappucino & chocolate chip muffins?

hi kate, happy to see you here on my blog:)this jam is traditionally cooked over the stove , but i am yet to try it out! if you are interested, just check out this link which explains in detail how to prepare it directly over the stove top
