For my people will live as long as trees...For they are people blessed by the Lord, and their children too, will be blessed. I will answer them before they even call to me. While they are still talking about their needs,I will go ahead and answer their prayers! Isaiah 65:22-24

Danish fruit pastries

Danish fruit pastries

At home i simply call these 'Fruit triangles', though in the bakeries it is sold as 'Danish apricot pastries'! Call them any way you want, but one thing is sure is that these are very easy to make, using just three basic ingredients , but taste utterly butterly delicious just warm out of the oven! ;)
The apricot jam glaze is to sweeten the slightly tart n sweet canned apricots halves. Also use the best quality ready rolled puff pastry, as it makes quite a difference in the taste of the final product:) - talking from experience!;)

Ingredients:
Ready rolled puff pastry sheet - 1, apricots halved - 1 can, drained, melted butter - 25 gms, almond paste - 75 gms, icing sugar - 4 tbsps.

For the glaze:
Apricot jam - 2 tbsps, water - 1 tbsps.
Mix the jam & water & microwave it for about 20 seconds & reserve.

Method:Preheat the oven to 220°c. Trim the sides of the ready rolled puff pastry ( for it will be circular in shape) to form a big rectangle. Now cut out the rectangle into four squares. Cut each square diagonally to form two triangles each. You will end up with eight triangles. Roll out the almond paste into a thin sheet & cut it into triangles which are slightly smaller than the puff pastry triangles.
Place the almond paste triangles on the puff pastry sheets , arrange the apricot halves over it & brush it with the apricot glaze. Then brush the pastries generously with the melted butter & dust (generously)with the icing sugar & bake for 10 mins. Serve warm .

Using the trimmed edges, i have made some more Danish apricot pastries shaped like 'Fruit strips'! Yes! That is how i call these!;))
