Vegan chocolate cupcakes with chocolate icing!!:)
Okay i will admit it! I have once again been bitten by the baking bug!& all i want to do is bake something, be it bread or cakes!;) Take for instance today morning, as soon as i woke up, i had only one thought in my mind: BAKE SOME CHOCOLATE CUPCAKES!!


And then as i made my tea, another idea got lodged in my mind, ie: decorate them with some coffee flavoured icing !! So as soon as i had my morning cuppa , i set about my task very seriously! I was so seriously engrossed in my baking task that i even completely forgot to cook something for lunch! So just had the previous night's leftovers for lunch , but then these delicious cupcakes slathered with some chocolate icing sure made up for the 'leftovers' lunch;)

Mine were not truly vegan, for i used normal milk instead of soy milk. But the frosted cupcakes were so delicious that i ended up eating one & a half cupcake after lunch! Hmm..... if all the recipes in this book are as good as this one, then i think, that it is high time that i added this book to my cookbook collection!!;)


The frosting was ultra delicious & the cupcakes were moist & not very sweet . In fact these vegan cupcakes were everything that one associates with cupcakes , they were sinfully delicious!;) Finally i have found the perfect vegan chocolate cupcake recipe & chocolate frosting recipe, one that i can serve proudly to family & friends & the icing on the cake is that these cupcakes can be whisked up with the ingredients normally found in your kitchen !
